This drone image of Shek O Beach was taken from Dragon's Back Trail.
To get to the launch point, take the Island Line MTR to Shau Kei Wan Station. Then, go through Exit A3 and look for Bus No. 9 at the Shau Kei Wan Bus Terminus. Hop onto the bus and wait for your stop “To Tei Wan, Dragon’s Back”, which should be 11 stops later.
Once you get off at To Tei Wan, follow the path (it starts near 22.227024, 114.239785) that leads up the hill to the Dragon’s Back Hike. After a 20 minute trek (reference the GPS coordinates), you’ll arrive at a scenic spot overlooking the breath-taking scenery of Shek O Beach in the east. You can launch your drone from the lookout place to get this east-facing view of the beach.
